Channel 4's Food Unwrapped series discover that Black Rot bacteria is used to replace fat in light mayonnaise
In episode 6 of the Food Unwrapped programme, shown on Monday 22 Oct 2012,
helps Channel 4 discover that bacteria are used to replace the fat in light mayonnaise.
Joana who works on Xanthomonas campestris pv. campestris, a bacteria that can cause a disease on cabbages, turnips and other brassicas, demonstrates how the bacteria secrete a substance, xanthan gum, which helps bind the mayonnaise together.

Horticultural science has recently lost one of its unsung heroes. Dez Barbara’s death on 15 July 2012 followed a short period in hospital and came as great shock to those at ÌÇÐÄTV Crop Centre who had seen him at the laboratory bench just a few days previously.
