Bacon and Feta Quiche

Ingredients

  • Ready-made puff pastry sheet
  • 1/2 red onion (diced)
  • Handful of spinach
  • 4 bacon medallions (cut into bite-sized pieces) or bacon lardons
  • 100g feta (cubed)
  • 150ml reduced-fat creme fraiche
  • 2 eggs
  • 1 tablespoon milk
  • Salt and pepper to season

Method

  1. Preheat oven to 200 掳C.
  2. Put the creme fraiche, milk, and eggs in a bowl. Add salt and pepper to taste and whisk together.
  3. Fold in the onion, spinach, bacon and feta.
  4. Line your baking tin with your puff pastry, ensuring there are no holes for the liquid to seep through and that the pastry covers the edges of the tin.
  5. Pour in your mixture and distribute it evenly over the pastry.
  6. Bake in the oven for 30 minutes. Take it out of the oven and let it cook for 5-10 minutes, then enjoy!
