Bacon and Feta Quiche

Ingredients
- Ready-made puff pastry sheet
- 1/2 red onion (diced)
- Handful of spinach
- 4 bacon medallions (cut into bite-sized pieces) or bacon lardons
- 100g feta (cubed)
- 150ml reduced-fat creme fraiche
- 2 eggs
- 1 tablespoon milk
- Salt and pepper to season
Method
- Preheat oven to 200 掳C.
- Put the creme fraiche, milk, and eggs in a bowl. Add salt and pepper to taste and whisk together.
- Fold in the onion, spinach, bacon and feta.
- Line your baking tin with your puff pastry, ensuring there are no holes for the liquid to seep through and that the pastry covers the edges of the tin.
- Pour in your mixture and distribute it evenly over the pastry.
- Bake in the oven for 30 minutes. Take it out of the oven and let it cook for 5-10 minutes, then enjoy!
